Orange & Chocolate Loaf
This tender and moist orange and chocolate cake is one of my absolute favourite bakes. This cake, made with just 10 simple ingredients, is not only quick to throw together but also completely vegan. This cake also gets better after a day, that's if it lasts that long!

Ingredients
160g granulated sugar* (see notes)
9g orange zest
200g plain flour
55g cocoa powder
10g baking soda
4g salt (I use Himalayan)
180g soy milk* (see notes)
90g orange juice
60g neutral oil, (I use vegetable)
20g apple cider vinegar
Method
Preheat oven to 190°C fan forced (375°F). Line a 9x5 inch loaf tin with baking paper and set aside.
In a large bowl, mix together 160g sugar and 9g zest, let sit for 1-2 minutes. Sift in 200g flour, 55g cocoa, 9g baking soda, and 4g salt. Mix well. In a jug, whisk together 180g milk, 90g juice, 60g oil, and 20g vinegar. Add wet ingredients to the flour mixture and mix well until combined. Pour the batter into the prepared tin. Bake for 40-45 minutes, or until a skewer inserted into the center comes out clean.
Let the cake cool in the tin for 10 minutes. Turn out the cake and place it on a cooling rack, or flip the tin over and place the cake on top. Allow it to cool for another 25-30 minutes. Slice the cake into 8 pieces and enjoy!
Notes
Milk: I know that some people have an issue with soy, so I wanted to suggest some other milks that may work, but keep in mind I haven't tried these. Almond, rice or oat milk may also work. The milk I use is shelf stable / long life milk, not fresh.
